We hope you had a great holiday season and that 2017 is off to a great start for you.
Unfortunately, some of our fellow North Carolinians are still picking up the pieces from natural disasters that occured in 2016. Hurricane Matthew struck the NC coast on October 8th last year and many of our coastal residents are still without homes and businesses and struggling to get back on their feet.
Vinnie’s wants to help. As you know, Vinnie’s and Chef Tom are big supporters of fresh and local NC seafood. Many of the families affected by Hurricane Matthew have made their living in the seafood industry for generations and without them, we would not have access to the great variety of NC seafood that we are able to serve you on a regular basis.
This month, Chef Tom will be featuring his signature Baked NC Oysters with Bacon, Collards and Brie and Vinnie’s will be donating all of the proceeds from the sale of this special dish to the Cape Hatteras United Methodist Men. This wonderful group is operated completely by volunteers and 100% of any donations they receive go directly to those in need. (If you do not care for oysters, you can still make a donation!)
Please join us this month to celebrate the New Year, enjoy some delectable NC seafood and help our coastal neighbors get back on their feet. Follow the link below to find out more about storm damage on Hatteras Island and about the Cape Hatteras United Methodist Men.
Braised Certified Angus Beef Short Rib
This week Chef Tom is featuring some good, old-fahioned comfort food: Boneless Certified Angus Beef Short Ribs slowly braised with red wine and beef stock until fork tender, served with seasonal root vegetables roasted in duck fat and all drizzled with the reduced braising jus.
If you’re looking for some post-holiday decadence, we’ve got it. This week, our Featured Dessert is Chef Tom’s Chocolate Profiteroles with Hazelnut Ice Cream, Frangelico Sauce, Shaved White Chocolate and Toasted Hazelnuts. There are plenty to share, or keep them all to yourself.
