June is the gateway into Summer and with that in mind the anticipation for some of your Summer favorites has been building. As the days grow longer and warmer, so does the list of available seasonal crops from all of Chef Tom’s farmer friends. That means lots of new and exciting flavors for you to try in the coming days and weeks.
This week’s Raleigh City Farm Salad includes NEW ingredients that really kick off Summertime- Baby Mixed Lettuces with Blackened NC Shrimp, Local Watermelon, Feta Cheese, Toasted Cornbread Crumbles, Cherry Tomatoes, Cucumbers, Radishes and a White Balsamic Vinaigrette.
From our friends at Locals Seafood, we’ll have freshly caught NC Red Drum, pan-fried and served with Roasted Yukon Gold Potatoes, Savoy Cabbage and a Preserved Lemon Aioli.
Many of you have already been asking about another of Chef Tom’s popular seasonal desserts and it will be just a couple more weeks before Peaches and Blueberries really get into season. In the meantime, come in to try one of our old favorites- Pecan Tart served with house made Mint Julep Ice Cream, made with Mint from Chef Tom’s own herb garden.
We would also like to remind you that Vinnie’s will be closed the entire week of July 4th, Tuesday, July 3rd through Saturday, July 7th to give our staff some much needed R&R and to spruce things up a little at Vinnie’s. We will reopen at normal business hours on Tuesday, July 10th. We hope you have a safe and happy holiday, but we hope to see you at Vinnie’s before the break!
Chappellet 2014 Signature Cabernet Sauvignon
2014 Chappellet Signature Cabernet Sauvignon is a blend of 76% Cabernet Sauvignon, 9% Petit Verdot, 6% Malbec, 5% Cabernet Franc, and 4% Merlot.
Deep and rich, this is a classic expression of hillside Napa Valley Cabernet Sauvignon, offering alluring aromas of boysenberry, black currant, and dark chocolate, as well as subtle layers of sweet oak, savory herbs, and fresh-roasted coffee. On the palate, ripe fruit and plush, radiant tannins create a velvety mouthfeel and an almost liqueur-like richness that carries through to a long, lingering finish. -Winemaker’s Notes.
